Oma Fried Cabbage Noodles Recipe
- 180 g egg noodles
- 20 g butter
- 1/2 medium onion
- 75 g bacon
- 500 g white cabbage
- 100 ml water or vegetable stock

- Preheat the pan to medium heat. Melt the butter in it.
- Meanwhile, cut the cabbage halfway and then into thin stripes.
- Add the onion and fry until golden brown.
- Add bacon and fry for another 3 minutes.
- Add the cabbage and 100ml of water or vegetable stock (with water, the noodles cook quicker) and fry it for about 7-8 minutes.
- Frain the noodles and add them to the pan. Fry for 3 minutes to combine the flavours!
- Season with salt.

White cabbage – is the right choice for this dish. Usually, go for either Canonball Cabbage, Dutch White Cabbage, Conehead Cabbage or Earlina Cabbage.
Butter – regular, unsalted butter.
Onion – white onion, finely chopped.
Bacon – smoked bacon cubes.
German Egg Noodles — For this dish, I use Bandnudeln, a type of German pasta that looks like short ribbons. Bandnudeln are long and flat, similar to fettuccine or tagliatelle. They have a higher egg content, giving them a richer flavour.

Fried Cabbage Noodles are a very versatile dish. You can use the suggested ingredients, but feel free to use other ingredients as well.
- Parboiled Sausage – any German parboiled sausage will do. My suggestions would be Wienner, Frankfurter or Bologna Sausage cut into slices
- Minced Meat – a mixture of minced pork and beef would be perfect.
- Kale – 100g of kale leaves cut into smaller pieces.
- Carrot Stripes – 50g of thin carrot stripes.
- Bell Pepper Stripes – I would go for Yellow or Red Bell Pepper
- Green Beans
I only use salt to season the noodles in my recipe because I like to keep it simple. But if you like you can add black pepper, cayenne pepper, paprika powder, or chili powder.
Storage & Reheating
Store in the fridge for up to 3 days.
Freeze the noodles for up to 6 months.
Reheat slowly in a coated pan.
