German Potato Salad with Mayonnaise

Creamy potatoes, fresh cucumber, and crunchy onion—this German potato salad is our favourite and always a top choice at parties.

Ingredients

Potato Salad

  • 500 g waxy potatoes for jacket potatoes!
  • 1 tbsp salt
  • 1 fresh cucumber peeled, finely sliced
  • 1 tsp salt
  • 1/2 onions yellow

Dressing

  • 100 g mayonnaise
  • 3 tbsp mustard
  • 1 tbsp white vinegar optional
  • 1 tsp marjoram
  • 1-2 tsp salt
  • pepper

Serving Suggestion

  • fresh chives, parsley or dill
  • 2 pair Frankfurt Sausage (4 sausages)

Instructions

Cook the potatoes

  • Depending on their size, cook the jacket potatoes in salty, boiling water until done but not overcooked. They should be soft but not mushy.
    Suggested cooking times:
    For small potatoes - 15min,
    Medium - 18 min
    And large - 20 minutes.
  • Place slices of the cucumber in a small bowl and add 1 tsp salt. Stir it and set aside for 30 minutes. 
  • Chop the onions.
  • At this point, the potatoes should be ready. Drain the potatoes and let them cool down a bit before you start peeling them.
  • Remove excess water from the cucumber.

Prepare the dressing:

  • Mix mayonnaise, mustard, white wine vinegar, marjoram, salt and pepper to prepare the dressing.

Make the salad

  • Peel the potatoes and cut them into thin slices.
  • Combine cucumber, onion, potato slices and dressing; mix well.
  • Set aside for at least 30 minutes. Correct seasoning if you need it.
