German Celeriac Soup
Ingredients
- 600 g celery root
- 250 g potatoes
- 1 apple
- 1 onion
- 20 g butter
- 1 l vegetable fond or stock
- 1 garlic clove
- 200 ml cream
- salt
- pepper
- nutmeg
- 2-3 tbsp white vinegar or apple vinegar
- 2 tbsp chopped parsley

Prepare the ingredients
- Peel and cut the onion, celery root and potatoes roughly.
- Peel and cut the apple into quarters and core it.
- Take a large pot and melt the butter in it.
- Add chopped onion and fry until translucent.
- Add celery root, potatoes and apple. Fry it for 3 minutes, turning from time to time.
- Add the vegetable stock or fond.
- Peel and press the garlic.
- Bring it to a boil, cover with the lid and simmer for 20 minutes (or until the vegetables are soft).
- Blend the soup until smooth.
- Season the soup with salt, pepper, nutmeg, and white or apple vinegar.
- Add cream, bring it to a boil and stir well.
- Correct the seasoning.
- Garnish with parsley before serving.
