Recipe: German Bread Pudding - Kirschen Michel - Winter Edition

INGREDIENTS
  
  • 350 g french baguette around 1,5 french baguettes or 4-5 white bread rolls
  • 350 ml milk full fat
  • 100 g sugar
  • 8 g vallenin vanilla sugar from Dr. Oetker
  • 1/2 fresh vanilla
  • 100 g butter
  • 1 pinch salt
  • 1 tsp cinnamon
  • 1/4 tsp ground cloves
  • 3 eggs
  • 350 g cherries
  • 50 g almond slivers
INSTRUCTIONS
 
  • Take butter out of the fridge.
  • Preheat the oven to 180°C (356°F). Cut the baguette into 1 cm thin slices.
  • Cut open and scrape 1/2 of vanilla bean.
  • In a small pot, mix milk, sugar, vanilla sugar and vanilla. Bring it to a boil, stirring constantly.
  • Pour the warm milk-mixture over the bread roll slices and set aside. The bread slices will absorb the milk mixture.
  • Mix the soft butter with sugar, salt, cinnamon,es in a large bowl and ground clov until fluffy; add the eggs and mix well. Gently mix in the bread roll slices.
  • If you use cherries from the glass, drain them and check if they have any pits. If they do, please remove them.
  • Pour half of the mixture into a baking dish. Smaller casseroles are suitable for four people. Cover with half of the drained cherries, then add the second half of the remaining cherries and the baguette mixture. Sprinkle with almond slivers.
  • Let the casserole bake for 30 minutes and cool slightly and in the meanwhile cook the vanilla sauce.
  • Dust the casserole with powdered sugar.
  • Serve lukewarm or cold with vanilla sauce.

Easy German Bread Pudding Recipe

Ingredients You'll Need

Bread: To make German bread pudding, you can use white bread rolls or baguettes. A 55-65 cm baguette weighs between 250 and 300 grams, so for this recipe, you will need 1.5 of them. One bread roll weighs 80g so that you will need 4 to 5 bread rolls. Keep that in mind when shopping for this recipe. 

Milk – full fat milk

Sugar – I use caster and vanilla sugar from Dr Oetker, called vanillin, for this recipe.

Butter – Regular, unsalted butter.

Eggs – medium eggs (size M).

Spices — Cinnamon is the spice of choice in recipes. However, in winter, I enjoy adding ground cloves, which transform traditional pudding into a delightful winter treat.

CherriesSour cherries in jars are most convenient, especially in winter when fresh ones are unavailable. Before adding any cherries to the pudding, make sure they are pitted.

Almond Slivers – Almonds add a nice crunch to this delicious pudding. When I have a little time, I caramelize the powdered sugar on top with a blowtorch to make it extra crispy.
