Traditional Polish Fluffy Racuchy Recipe

If you are not Polish you are probably wondering what Racuchy are. Racuchy are very similar to American pancakes normally stuffed with apple slices and served with caster sugar. At my home, we ate them on Friday (as is vegetarian) for lunch. I have been searching for a good recipe and finally, I have just asked my mum how she prepares them.

Racuchy that my grandmother made were extremely fluffy. She was apparently not only adding baking powder to the dough but also she whisk the egg white before combining it with the Racuchy mixture. That was her secret! I can assure you that those will be the most fluffy Racuchy you have ever made. And that’s with no effort! My husband loves them and he doesn’t want me to use any other recipe to cook them!

If you like cinnamon you can add 1 tablespoon of it to the dough before pan frying it. The same you can do with clove. If you don’t have apples – plums, banana or even some dried fruit will do! As you see, here you have plenty of space for making them the way you and your family will love.

Fluffy racuchy with apples

Prep Time 25 minutes
Total Time 25 minutes
Servings 4 people

Ingredients
  

  • 1 apple
  • 2 cups flour
  • 1 cup milk
  • 1 egg
  • 4 tbsp sugar
  • 2 tsp baking powder
  • oil for frying
  • caster sugar

Instructions
 

  • Take 3 bowls.
  • I the first bowl combine milk, egg yolk and sugar.
  • In the second bowl mix flour and baking powder.
  • In the third bowl whisk the egg white.
  • Slowly start putting flour into milk mixture.
  • After you are done add egg white and mix slowly.
  • Fry on the medium low heat 3 min each side.
  • Serve hot with caster sugar and ice cream or fruit sauce.
