Traditional Spaghetti alla Carbonara

Ingredients

Pasta

  • 250 g spaghetti

Sauce

  • 40 g Guanciale/Pancetta cubes
  • 3 eggs
  • 3 tbsp olive oil
  • 75 g Parmesan/Pecorino grated
  • salt and pepper

Instructions

Pasta

  • Cook the pasta in a pot with salty water al’dente. Follow the instructions on the pasta package.

Sauce

  • Heat up olive oil in frying pan. Fry guanciale/pancetta on medium heat until crisp.
  • Take a seperate bowl and combine eggs, cheese and a pinch of salt using the fork.
  • When the pasta is ready rinse it and put it in the pan with bacon and olive oil. Mix it all and leave for 1-2 minutes.
  • Remove the pan from the heat, add the cheese and egg mixture and stir until the cheese melts, creating a delicious sauce.
  • Serve with ground pepper and optionally with parsley.
