German Noodle Salad – The Best German Pasta Salad Recipe

German Noodle Salad is one of the most popular side dishes at the German Grill Party. Why? There are many reasons! The salad is not only delicious but also quick and easy to make. An additional advantage is that you can make it ahead of time and serve it when you need it. The German Noodle Salad goes well with any grilled meat, but you can also serve it with Schnitzel or on its own.

German Noodle Salad - Traditional German Pasta Salad

Traditional German Noodle Salad is fresh, creamy and hearty. It is a perfect side dish for your Grill party, but it also goes very well with Schnitzel, Chicken-Wings, German Meatballs or any parboiled sausage.

Ingredients
  

  • 200 g Pasta maccheroni or fusilli
  • 100 g Bolognia Sausage
  • 150 g Pickled Cucumber
  • 100 g Green Peas fresh or frozen, good quality
  • 50 g Sweet Corn

Dressing

  • 150 g Mayonnaise
  • 1 tbsp Mustard
  • 2 tbsp Pickling brine
  • Salt
  • Papper
  • Cayanne Pepper optional

Instructions
 

Cook Pasta

  • Bring the water to a rolling bowl and stir in the salt salt. Then cook the pasta according to the package directions.

Prepare the rest of the ingredients

  • Cut the Bologna sausage and pickled cucumber into cubes.

Make the Dressing

  • In a small ball mix together mayonnaise, mustard, pickling brine, salt and pepper. If you want additional kick, add cayenne pepper.

Make the Salad

  • As soon as the noodles are cook, frain tem and put them into large bowl. Add frozen peas and mix. Set aside until the mixture cools down a bit.
  • Add sweet corn, Bologna sausage and pickled cucumber. Stir in the dressing.
  • Store the salad for at leat 30 minutes in the fridge before serving. This way the pasta will abrorb some of the dressing - delicious!

The perfectly prepared German Noodle Salad is hearty and rich. The dressing is creamy and thick. The sweet corn balances the tart taste of pickled cucumber, and green peas add crispiness and additional sweetness. Finally, the Bologna Sausage adds a smoky flavour. Let the sausage salad rest so the noodles absorb some of the dressing. This way, they will taste extraordinary.

Ingredients & Substitutes

Traditional German Pasta Salad

The quality of the ingredients is one of the most essential aspects of making German Noodle Salad. I tried pasta salads made with carrots and peas from the can — yukky.

Pasta – choose either fusilli or maccheroni

Bologna Sausage – finely ground, smoked pork sausage

Pickled Cucumberspickled cucumbers, dill cucumbers, gherkin quarters or sweet and sour pickled gherkins

Green Peas – sweet, high-quality green peas, fresh or frozen

Sweet Corn – high-quality sweet corn from the can

Mayonnaise – classic mayonnaise, for example, Heinz

Mustard – classic yellow mustard (medium spicy), for instance, Thommy or Löwnensenf

Additional Ingredients

You can add a few other ingredients to the German Noodle Salad. My suggestions are:

  • carrot cubes,
  • red pepper cubes,
  • parsley,
  • chives,

Tips

Use high-quality ingredients.

Let the past absorb some of the dressing before serving – this will significantly improve the taste of the noodles!
