The preparation of the German Fish Soup is remarkably straightforward, making it a dish you can confidently master.

  1. First, you prepare the vegetables by washing, peeling and cutting them.
  2. Now it’s time to cook. In a large pot, fry the onion for 2-3 minutes until translucent. Add the wine and let it evaporate. Pour the fish fond (or fish broth), add the leek, carrots and German Turnip, and let it cook for 10 minutes.
  3. In the meantime, you cut the fish filets into bite-sized pieces.
  4. After this time, add cream, adjust seasoning and thicken the soup.
  5. Add the fish and let it simmer for 8 minutes. Voila!

Fish soup supports overall health and well-being. It is rich in vitamins, minerals, and omega-3 fatty acids, which are essential for heart and brain health. It is also high in protein and low in calories, as it contains a lot of vegetables and delicious fish—a no-brainer.

Ingredients
  

  • 2 tbsp butter
  • 1 onion
  • 1/2 leek
  • 1 large carrot
  • 2 German turnips Kohlrabi
  • 100 ml wine
  • 800 g fish fond
  • 200 g water or vegetable fond
  • 200 g cream
  • salt
  • lemon juice optional
  • mondamin
  • 250 g cod filet
  • 100 g salmon filet
  • 2 tbsp fresh parsley or chives

Instructions
 

Prepare the vegetables

  • Chop the onion.
  • Peel the carrots. Cut them and the leek lengthwise and slice them into thin slices.
  • Peel the German turnip and cut it into short stripes.

Cook

  • Preheat the butter in a large pot.
  • Add the onion, leek, carrots and German turnip.
  • Fry them on a high heat, constantly turning to develop the roasting aromas.
  • Add the wine and let it evaporate.
  • Add the fish fond and water. Let the vegetables cook for 15 minutes.
  • In the meantime, cut the cod and salmon filets into bite-size stripes. Set them aside.
  • When the vegetables are tender, add the cream and season the soup with salt and lemon juice, if needed.
  • If you like, you can thicken the soup. I add a good amount of Mondamin. But you can thicken the soup with water-starch or water-flour or butter-flour mixture.
  • Turn the heat to medium and add the fish pieces to the soup. Ensure they are covered with the liquid, but don't stir them (because they will likely break). Cover the soup with the lid and let them cook in the soup for eight minutes.
  • In the meantime chop fresh herbs, like parsley or chives.
  • Serve the soup with fresh herbs on the top.
  • What a treat!

Although there are delicious fish soups worldwide, Northern German Fish Soup is one of my favourites. Its rich and gentle taste won my heart. The soup’s basis is delicious fish and vegetable broth, and the vegetables and fish add nourishment.

What vegetables should be used for German fish soup?

I love adding German turnips, leeks, and onions to my fish soup. They go exceptionally well with fish. If you can’t access German Turnip, please use potatoes or fennel. They will be a filling addition to the soup and make it taste exceptional.

If you are a big fan of fish soup, try making Solyanka with fish instead of meat! Surprisingly, the tartness of the pickles goes well with white fish and even salmon. Another fish soup to try is the Eel Soup from Hamburg. Apart from the fish, the soup contains vegetables, dumplings, and dried fruit (plums, apples, and apricots).
