German Creamy Horseradish Soup with Bacon Flakes and Cress

German Horseradish Soup with Bacon Flakes is a perfect starter. It is surprising and light and will surely awaken your appetite. You can adjust the level of spiciness according to your taste.

Ingredients
  

  • 20 g butter
  • 1 onion
  • 200 g cream cheese full fat
  • 1 l vegetable fond or stock
  • 100-200 g grated horseradish or Horseradish Cream, fresh or from a jar
  • 100 g bacon slices for serving
  • Worcestersauce
  • sugar
  • salt
  • pepper
  • lemon juice optional
  • parsley for garnish, optional

Instructions
 

  • Chop the onion very finely.
  • In the medium pot melt the butter.
  • Add onion and fry it until translucent.
  • Add cream cheese and horseradish. Add only half the recommended amount of horseradish if you don't like spicy. You can add some more later.
  • As soon as the cream cheese melts, add vegetable fond or stock. Please bring it to a boil, turn the heat to medium-low and let it cook for 10 minutes. It would be best if you stirred the soup from time to time.
  • Cut the bacon slices into smaller chunks. Preheat a large pan without oil and fry the slices until crispy.
  • After 10 minutes, season the soup with salt, pepper, Worcester sauce, sugar, and lemon juice according to your taste. Add more horseradish if you feel the soup needs to be more kick.
  • Garnish the soup with bacon cubes and parsley.
  • Serve immediately.

What horseradish for German Horseradish Soup?

Traditional German Horseradish Soup

You have three options: freshly grated horseradish, grated horseradish from a jar, or cream horseradish from a jar (the mildest option). I use grated horseradish from the jar. If you have already tried grating fresh horseradish on a manual grater, you know why.

The horseradish makes the soup spicy, the fried bacon gives it a hearty note, and the cream cheese makes it rich and creamy.
Sugar, Worcester sauce, salt, and pepper are the perfect seasonings for the soup. You can also add lemon juice, although horseradish from the jar is usually tart. I didn’t need acid in my soup.

How to make German Horseradish Soup?

It takes 20 minutes to make German Horseradish Soup. I know that’s hard to believe; I was surprised myself.

  1. If you use grated horseradish from the glass, the only preparation step is chopping the onions. When the onions are ready, you can move to the stove and cook.
  2. First, you need to fry the chopped onion until translucent.
  3. Then add horseradish and cream cheese and stir until the cream cheese melts. The next step is to add the vegetable stock. Let this mixture cook for 10 minutes.
  4. In the meantime, you can fry the bacon in the pan; you will need it for the flakes!
  5. The last step is to season the soup with salt, pepper, and Worcester sauce. If necessary, you can add sugar and lemon.

I serve my German Horseradish Soup with fried bacon flakes, but there are countless options to avoid using bacon. Other perfect toppings are:
