German Green Bean Soup
The recipe below is the easiest recipe that I have ever published. When I tried it for the first time, I was amazed that in 10 minutes of active cooking, one can prepare such a delicious and nutritious meal. The soup has protein, fibre, as well as potassium, phosphorus, magnesium and calcium!
Green Bean Soup was the first soup that my husband cooked for me. In my family, we prepared beef only on special occasions. Every holiday my grandmother would make traditional German Rouladen, and that was the only beef meal I knew. Do not get me wrong, beef rolls are just terrific. However, there are more yummy beef recipes out there that I have missed.
Ingredients
To make the soup, I briefly only used 3 ingredients: beef, frozen green beans and frozen soup vegetables. Let’s be honest, as much as one enjoys cooking, nobody wants to spend more time in the kitchen as necessarily. Therefore in the nearest Aldi, I discovered frozen organic soup vegetables and decided to use them for this recipe. Adding some potatoes is a great idea, but I couldn’t bother. The soup is just perfect as it is. The homemade beef broth, succulent and flaky chunks of meat and tender vegetables make it an ideal dish for any occasion.

Equipment
Ingredients
- 2 tbsp oil for frying sunflower
- 1 kg beef short ribs, flanksteak, beef shank, brisket, oxtail
- 750 g soup vegetables I used frozen
- 750 g green beans I used frozen
- 1,7 l water
- salt
- pepper
- sugar
- nutmeg
Instructions
Prepare the meat
- Wash the meat and pat it dry.
- Cut into bigger chunks. Up to 5cm long.
Cook the soup
- Take a large pot and heat up the oil. As soon as the oil is hot (check it with a wooden spoon if you are not sure), add the beef chunks and fry them for about 5 minutes or until lightly browned.
- Add frozen vegetables and water.
- Cook for at least 1,5 hours.
