Allgaeu Cheese Spread - My favorite German Cheese Salad
Ingredients
Dry Ingredients
- 250 g cheese Edam, soft Bergkäse or Gruyère
- 1/2 red bell pepper
Dressing
- 125 g mayo
- 1/2 tsp mustard
- 1/2 tsp paprika powder
- 1/4 tsp spicy paprika powder
- 1/2 tsp onion powder
- 1/2 tsp salt
Instructions
- Cut the cheese and bell pepper into small even cubes.
Prepare the dressing.
- Take a small bowl and whisk mayo, mustard, paprika powder, spicy paprika powder, onion powder and salt—correct seasoning.
- Mix the cheese and bell pepper cubes and put it into the airtight container,
- Store it in the fridge for 3 hours before serving.

In Germany, there are lots of delicious Cheese Spreads and Salads that you can make from scratch anywhere you live. Ingredients & Substitutes
You don’t need unusual ingredients to make delicious Allgaeu Cheese Spread, which is already a big win. Cheese is the main ingredient and, therefore, the most important one.
Regarding cheese, I recommend using just a plain Edam cut into cubes. If you like strong cheeses, feel free to use a mixture of Bergkäse (cheese from the German Alps or Gruyer) and Edam. The consistency of the cheese spread should be creamy, so it’s better to choose younger and softer cheeses.
Fresh bell peppers add extra crunch to the spread and are sweet and fruity. This creates interesting texture and flavour.
Paprika, spicy paprika, salt and onion powder are perfect spices for this spread.
Mustard and Mayo bring additional flavour to them.
Tips
The Allgaeu Cheese Spread taste better if you let it rest in the fridge for a few hours before serving. Resting time allows the ingredients to combine thoroughly.
Serving
The Allgaeu Cheese Spread is very versatile. It tastes great with Mischbrot (rye and wheat bread), a bread roll, a baguette, and a pretzel. The Allgäu cheese spread goes incredibly well with German beer. Pilsner or Weizen would be a great choice. So, it is a perfect appetizer for any German-themed party and usually something that not many people have tried.

The cheese spread can be stored in the refrigerator for 3-4 days.
I wouldn’t recommend freezing the spread.
Variations
When I discovered the cheese spread with paprika, I was naturally curious to try the other cheese spread variations. If you don’t like bell peppers, you can replace them with sweetcorn, pickled cucumber and egg. This is also a delicious mixture!
