Our German Christmas Potato Salad

Ingredients

Potato Salad

  • 500 g waxy potatoes for jacket potatoes!
  • 1 tbsp salt
  • 1 fresh cucumber peeled, sliced
  • 1 tsp salt
  • 2 red onions medium
  • 1 hard boiled egg

Dressing

  • 100 g miracle whip
  • 3 tbsp mustard
  • 1 tbsp white vinegar optional
  • 1 tsp marjoram
  • 1-2 tsp salt
  • pepper

Serving

  • 2 pair Frankfurt Sausage (4 sausages)

Instructions

Cook the potatoes

  • Cook the jacket potatoes in a salty, boiling water depending on the size until done but not overcooked! They should be soft but not mushy! For small potatoes - 15min, medium - 18min and large - 20 minutes.
  • Place slices of the cucumber in a small bowl and add 1 tsp salt. Stir it and set aside for 30 minutes. 
  • Chop the onions and hard-boiled egg.
  • At this point, the potatoes should be ready. Drain the potatoes and let them cool down a bit before you start peeling them.
  • Remove excess water from the cucumber.

Prepare the dressing:

  • Mix miracle whip, mustard, white wine vinegar, chopped onions, hard-boiled egg, marjoram, salt and pepper.

Make the salad

  • Peel the potatoes and cut them into 5mm thick slices.
  • In a large bowl combine cucumber and potato slices as well as dressing, mix well.
  • Set aside for at least 30 minutes. Correct seasoning if needed.

Cook sausages and serve

  • In a medium pot bring salty water to boil. Turn off the heat and add the sausages. Leave them in the pot covered with a lid for 10 minutes. Take them out from the pot and serve with room temperature potato salad.
