German Schnitzel Gravies – do you actually know that Schnitzel in Germany is served very often with sauces on the side? When you think about Schnitzel the first thing what comes into your mind is the standard Schnitzel served with french fries. You need to know that in German restaurants you can surly find more than this! There are not only different sauces but also different side dishes – from friend potatoes to Spätzle. I would say that the sauce is like a cherry on a cake – something you could die for.

Below you will find 4 of my favourite Schnitzel Recipes that I would like you to try. Pick one or two and surprise your loved one!

German Schnitzel Gravy – Cream Sauce (Rahmsoße)

Ingredients

  • 1 tbsp Butter
  • 1 Onion medium
  • 50 ml White wine
  • 200 ml Beef stock
  • 200 ml Cream
  • 1 tsp Paprika powder
  • Salt & pepper
  • Buerre manie

Instructions

  1. Chop the onions into small cubes. Add butter to the pan and fry your onions with a pinch of salt for about 3 minutes. Add wine and let it cook until there is 1 tablespoon of liquid left.

  2. Add stock and let it warm up. Add cream and bring it to boil. 

  3. Strain the sauce or blend it and put it back to the pan. 

  4. Use buerre manie to thicken the sauce. Turn the heat to medium-low and simmer the sauce for at least 10 minutes.

  5. Season with salt, pepper and paprika powder for this beautiful colour!

German Schnitzel Gravy – Creamy Mushroom Sauce (Jägersoße)

Ingredients

  • 250 g Mushrooms fresh
  • 20 g Smoked bacon
  • 1 Onion
  • 100 ml Vegetable broth unsalted
  • 200 ml Cream
  • Milk if the sauce gets to thick
  • Salt & pepper
  • Beurre manié
  • 1 handful Parsley fresh

Instructions

Prepare for ingredients

  1. Chop the onions and bacon into small cubes, clean and slice the mushrooms.

Make beurre manié

  1. Mix 1 tablespoon butter with 1 teaspoon flour. The mixture should be nice and soft.

Prepare the sauce

  1. Add fat to the pan, wait until it is hot and fry onions on medium heat until translucent. Don’t forget to add the salt and stir!

  2. Add bacon, stir the whole thing again and keep frying for another 2 minutes. 

  3. Add mushrooms and wait until soft.

  4. Add broth and wait until it starts cooking. Add cream, wait until the ingredients combine and cook again. When you see the bubbles you should turn the heat to medium low and let it simmer for up to 15 minutes.

  5. Add beurre manié and stir the sauce. After 1-2 minutes you should see how thick the sauce got 🙂

  6. Season with salt, pepper and fresh parsley. If o you want to reheat the sauce just add a bit of milk before.

German Schnitzel Gravy – Gipsy Sauce (Zigeuner Soße)

Ingredients

  • 1 Onion
  • 1 Pepper red
  • 1 tbsp Butter for frying
  • 50  ml White wine
  • 100 ml Roast sauce
  • 50 ml Tomato pure
  • 2 Gherkins
  • 0,5 tbsp Paprika powder

Instructions

Prepare the ingredients

  1. Slice the onions, bell peppers and gherkins.

Prepare the sauce

  1. Preheat the pan, add butter and let it melt. Add onions with a pinch of salt and fry over medium heat until translucent. 

  2. Add peppers and wait until they soften. Stir the mixture from time to time.

  3. Add the wine and wait until it evaporates.

  4. Add the tomato puree and roast sauce and bring it to boil. Add gherkins, turn the heat to medium-low and simmer for 8 minutes.

  5. Season with salt, pepper and paprika powder. 

  6. Serve immediately, freeze it or store in the fridge for not longer than 3 days.

Schnitzel Gravy – Fried onions

Ingredients

  • 5 medium onions
  • 50 g butter
  • salt
  • sugar optional

Instructions

  1. Cut the onions in a bigger chunks.

  2. Take a small pan and fry butter. As soon as the butter melts add the onion and fry for the first 5 minutes on medium heat. Change the heat to low and fry for another 20-25 minutes.

  3. Enjoy the smell and stir from time to time.

  4. As soon as the onions turn brown – they are ready!
