Pasta
  1. Cook the pasta in a pot with salty water al’dente. Follow the instructions on the pasta package.
Sauce
  1. Heat up olive oil in frying pan. Fry guanciale/pancetta on medium heat until crisp.
  2. Take a seperate bowl and combine eggs, cheese and a pinch of salt using the fork.
  3. When the pasta is ready rinse it and put it in the pan with bacon and olive oil. Mix it all and leave for 1-2 minutes.
  4. Remove the pan from the heat, add the cheese and egg mixture and stir until the cheese melts, creating a delicious sauce.
  5. Serve with ground pepper and optionally with parsley.
